Hushpuppies are a southern style bread most often served with seafood or BBQ dishes. Similar to cornbread but made into smaller bite size pieces and then deep fried. Ingredients often include items such as green onions, bell pepper, jalapenos and even pulled pork. A definite southern comfort food that will never fail to please.

Ingredients:
1 Cup Yellow Corn Meal
½ Cup All-Purpose Flour
1 tsp. Baking Powder
1 tsp. Salt
½ tsp. Baking Soda
½ tsp. Garlic Powder
½ tsp. Onion Powder
1 Egg well beaten
1 Cup Buttermilk (Regular milk can be used if preferred.)
½ Cup Green Onions finely diced 
1 Qt. Cooking Oil (Any high heat cooking oil of your choice may be used.)

Directions:
In a medium bowl, combine all ingredients except the buttermilk and onions and mix together well. Add in a little buttermilk at a time while mixing. Continue adding the buttermilk until the batter is a bit thicker than cake batter consistency. It should be very moist but able to stick to a spoon when turned upside down without dripping. Add the green onions and mix in well.
In a medium pot (or deep fryer) heat the oil to 350°. Using a teaspoon, scoop up a spoon full of batter (about ¾ the size of a golf ball) and carefully rake into the oil with your finger or another spoon. You can cook several at the time but don't over crowd them. Roll the hush puppies over occasionally with your spoon while cooking so they brown evenly on all sides. Cook to a good medium brown color. Place on paper towels to drain. Best served hot and fresh.
