Ingredients:
Fresh Peppers (Any type will do but Jalapeno, Poblano, New Mexico Chile, Cayenne and Bell Peppers are some of the top picks.
Recommended Wood:
Pecan
Preparation:
Wash and dry the peppers.
Place the peppers directly on a smoker rack. (It's easier to place peppers on a small cooking rack and then place the rack and peppers in the smoker. Saves time moving each pepper.)
Smoke the peppers for 30 minutes with full smoke.
Check for doneness.
Peppers should feel softened but still a bit firm. If using on burgers or sandwiches the peppers can be cooked softer, just not mushy.
