Ingredients:
2 pounds (about six cups) Summer Squash
1/2 cup Butter (Melted)
1Onion (Diced)
2 Eggs
1 cup Mayonnaise
1 tsp. Sea Salt
1
tsp. Black Pepper
1 cup Cheddar Cheese (Shredded)
1 cup Bread Crumbs
Directions:
Preheat
the
oven to 350 degrees.
Bring a large pot of water to a boil.
Add
the
squash and cook until tender
(about 3 minutes boiling).
Drain well.
Place
the
squash in a large mixing bowl.
Add
the
butter to the squash and mix,
reserving about 1/2 a tablespoon.
Mix in
the
onion, eggs, mayonnaise, salt,
pepper, and cheese.
Transfer
the
mixture to a 9x13 casserole
dish.
Top with
the
bread crumbs. Dot or sprinkle
the
reserved butter on top.
Bake at 350 for about 40 minutes.
